Cherry Tomato Salad with Mint & Champagne Vinegar
1 pint mixed cherry tomatoes, halved horizontally
12 broad leaves of fresh mint, finely sliced
1 small shallot (or 1/2 small red onion), minced
3T champagne vinegar (or use champagne or sparkling wine!)
3T extra virgin olive oil
Sea salt and cracked black pepper to taste
Serves 4 as a side dish
Combine all ingredients and season to taste. Let stand 20 minutes before serving.
