Cucumber Salsa • Spaghetti with Arugula and Tomatoes Linguini with Meyer Lemons • Strawberry Basil Summer Cocktail
Four recipes for all that garden fresh produce...
Linguini with Meyer Lemon
1 pound linguini
3 Meyer lemons - zest and juice
4 oz. creme fraiche
3/4 C grated hard cheese (Parmesan, Romano, Asiago, etc.)
1 bunch arugula, cleaned and with the largest stems removed
2 medium tomatoes, roughly chopped
10-12 leaves fresh basil chopped
Salt and fresh ground black pepper

Cucumber Salsa
3 regular cucumbers, peeled, seeded, chopped into ¼ inch dice
1 tsp. kosher salt
1 Tbs. sugar
2 tomatoes, cored and sliced into ¼ inch dice
1/2 white onion finely minced
2 jalapeno peppers, seeded and finely minced
½ bunch of cilantro, finely minced
2 cloves of garlic, finely minced
¼ cup olive oil
¼ cup red wine vinegar
½ tsp. pepper
1 Tbs. sugar
1 large avocado, chopped roughly the size of the cucumber pieces

Spaghetti with Arugula and Tomatoes
This is a very quick & easy dish, refreshing and healthy.
3/4 to 1lb of spaghetti
2 cups of coarsely chopped arugula (pat dry after washing)
2 cups of diced tomatoes
Salt & Pepper
3-4 Tb extra-virgin olive oil
Grated parmesan cheese

Strawberry Basil Summer Cocktail
2 basil leaves
2 mint leaves
2 strawberries, plus one slice of one for garnish
1 tsp granulated sugar
1 1/4 oz vodka
Juice of one lemon, plus one wedge for garnish
Splash of soda water
